This is used to slice boneless meat and fish fillets.

The blade of the knife is constructed out of high carbon steel which keeps the edges very sharp for long time.

GOU UMANOSUKE creates knives that are focussed on performance quality. it strives to forge knives which 

cannot be beaten on sharpness  and therefore employs only single-edge blades, 

much shaper than the traditional double-edged western style blade. These knives come highly 

recommended by Kataba Japanese Knife Shop and Japanese chef’s for despite simple looks, they 

are simply unbeatable interns of performance.

The balancing of the handle with the blade allows for the handling.

To sharpen these knives, a ratio of 9:1 should be employed, with the right-hand side receiving 90% 

of the sharpening, and the left, only 10%.

The carbon steel knives require special care to avoid rusting.
