KAJIBE KUROUCHI SANOTKU KNIFE CHESTNUT TREE HANDLE 165MM

This traditional Santoku knife is hammer forged in Sanjo, Nigata prefecture by Ishikawa Hamono; Nigata is an area renowned for handcrafted tools and knives. The blade is composed of Shirogami 2 clad with soft iron, Shirogami is the purest traditional cutlery steel used in Japan and capable of extreme sharpness whilst having good edge retention. This kind of rustic carbon steel knife is a joy to sharpen using waterstones but does require careful maintenance as it is a reactive metal so the knife must be regularly wiped and dried during used and should be oiled before being stored.

 Edge Angle: Double- edged

Blade Length: 165mm

Total Length: 318mm

Weight: 126g

Blade Material: Shirogami 2 / White  Carbon Steel 2 Clad with soft iron
